University and industry experts are sharing ideas who are just getting started with the business.
Penn State is well known for their ice cream course because of the names who have taken the course such as Ben and Jerry and representatives from many major ice cream companies.
"It may be zero out, but ice cream is always popular," said Mark Heyler from Star Kay White Inc.
"As our cultures bland we see new ethic flavors, even with ice cream," said Thomas Cook PSU ice cream course student.
There are seminars and more hands on opportunities in food science labs with an emphasis on having fun.
"At 83 years old I have fun every day of my life," Cook said.
This is the 120th year for the Penn State ice cream short course.
The thought on this course is to continue education in the nation. Its held in early January because back in the day when it first started it was a slower time of year for dairy farmers and those involved with ice cream manufacturing.
